This variety was gifted to us by a good friend and we're happy to add it to our garden.  Aji Amarillo is native to Peru and has been called the most important ingredient in Peruvian cuisine.  It's no wonder; this pepper has it all.  Hot, sweet, and fruity (mango-like) flavor.  Nice tropical aroma.  Young fruit start out green, turn yellow, then ripen to a fiery orange. Size of the pods vary but you can generally expect to see peppers 6 inches in length by an inch wide.  Heat is similar to Cayenne pepper at 30,000 to 50,000 SHU.  Very versatile.  Can be used for grilling, stuffing (yes, they're big enough), dried, ground, and any South American dish you can think of.  Aji Amarillo do great in a container as well as in-ground.  Prolific plants grow to a bit over 6 feet and will need to be staked. 85 days to maturity.  Open-pollinated.

Sow seeds indoors, 1/4" deep, in a warm location.  14-28 days to germinate.  Transplant to fertile soil in containers or hedge 20" apart, at least 3' between rows, in areas with full sun in the spring.
