68 days to maturity.  Bulgarian Carrot Chile Peppers are an heirloom variety growing on small plants reaching just 18" in height.  They bear clusters of peppers close to the main stem at an unbelievable 40-50 fruits per plant!  Bright orange pods are elongated, curved to straight, averaging 1½–3½" in length, with a conical, tapered shape and a distinct point on the non-stem end.  The skin is smooth, polished, and thick, ripening from dark green to bright orange when mature.  The flesh is thin, crisp, and aqueous, encasing a central cavity filled with a few round, flat, cream-colored seeds.  Bulgarian Carrot chile peppers are known for their crunchy nature and have a fruity, tangy, and slightly sweet flavor mixed with an instant, moderate to hot level of spice that lingers in the back of the throat.  5,000 to 30,000 Scovilles.

Native to Bulgaria, the Bulgarian Carrot Chile Peppers are believed to be a cross of a Caribbean habanero varietal and a Bulgarian pepper and are also commonly referred to as Hot Carrot peppers or Shipka peppers, which is a name that is highly debated.  Some experts believe the term Shipka is named after a small town in central Bulgaria while other experts trace it back to a Bulgarian term for rose hips.  The English name of the pepper comes from its striking resemblance to a bright orange baby carrot.  Despite its many names, Bulgarian Carrot chile peppers are favored for their crunchy texture and tangy spice. 

Bulgarian Carrot Chile Peppers are favored for their crunchy texture and tangy spice.  They're best suited for both raw and cooked applications such as roasting, stir-frying, grilling and any preparation that will showcase the crunch.  The fruity undertone of Bulgarian Carrot Chile Peppers nicely complements the heat so they're an excellent choice for salsas, marinades, sauces, chutneys, or tossed into salads.  Also delicious when dried and ground or used as a base for the best hot sauces.

The striking beauty of Bulgarian Carrot Chile Peppers make them an excellent choice both for food and landscape.  They have an excellent ornamental quality and will really "spice-up" any garden.  This variety is great in ground and does equally well in a pot.  Growing in a pot gives you an opportunity to bring your pepper plant inside to extend your season when the weather starts getting cold.

Sow seeds indoors, 1/4" deep, in a warm location.  14-28 days to germinate.  Transplant to fertile soil in containers or hedge 20" apart, at least 3' between rows, in areas with full sun in the spring.
